Bali
always kept the memories in my heart. Earlier this month, I went back
to Bali for the second time. As usual, before leaving, I've already
designed what souvenirs I'll buy later. Unusually, this time Zauji
warned to look for chicken recommendations in Bali.
Bali,
this is the place I want to visit the most. This obsession may be
present because Bali is always a favorite conversation of anyone who
likes to travel. After years of waiting, the opportunity came in 2017. I
and a friend were chosen to visit Badung Regency in a work affair.
Badung Regency, Bali
Badung
Regency is located approximately 14 km from the provincial capital of
Bali, Denpasar, and takesabout 30 minutes using a car. Badung is also
one of the cities that offer many tourist destinations.
The first destination is, of course, the one and only Kuta Beach,
a beach that is popular not only in Bali but also in the world. The
stretch of white sand stretches beautifully, accompanying me, who
ngabuburit while waiting for the time to break the fast while watching
the sunset. The second, of course, is the Sangeh Monkey Forest, the forest inhabited by tamed monkeys among the towering nutmeg trees.
The
most interesting thing about Bali is its culture and traditions, which
are still thick. Sitting next to the window of the car while paying
attention to the road became my hobby along the way during visiting
Bali. Coming to coincide with Shaum arafah makes me not try
a lot of Balinese cuisine. I don’t remember to ask for a chicken
recommendation in Bali. Even so, some tourist attractions I had visited.
Denpasar
If
I used to visit Badung Regency, this month only Denpasar City is our
destination. Happiness never receded. Moreover, this time we stayed not
far from Puputan Denpasar Square, which is loaded with history and is now a
place of recreation for residents of Denpasar City.
Every
morning, we walked over the street while being accompanied by the
boister of walking. And in the afternoon, while walking leisurely to the
hotel, we can enjoy the typical atmosphere of Bali. The seller of fried
and satay on the side of the road and the fun fathers held chess at the
crossroads. We also had time to taste the freshness of Superdinacy meatballs that taste no less good with the meatballs made in Bandung that we used to eat.
A
busy schedule makes us not have enough time to walk around. The Bali Museum
on Jalan Mayor Vishnu, which is adjacent to Puputan Square, is only able
to be visited on the fourth day.
Alhamdulillah,
we also had time to set foot at Sanur Beach and stop by Garuda Vishnu
Kencana Cultural Park, better known as GWK. Although in a hurry
because the time has shown at 6 pm, it feels like it has been 'sah' stepping on Denpasar when you have visited both. The Tour de City is closed
by buying souvenirs at the complete in Denpasar.
Chicken Betutu
According
to my promise to Zauji, before the day of the return, I began to hunt
for information about chicken betutu. Chicken betutu is one of the
typical Balinese culinary dishes that has been famous. The distinctive mix,
rich in spices and spicy, is much preferred.
Betutu comes from the words tutu'tutu, which means 'burn,' and 'bebe,’
which means 'meat.' Chicken betutu is indeed processed by burning.
Chicken betutu started in the Gianyar area, Ubud, and spread to
Gilimanuk and Jembrana.
Composite chicken seasoning Betutu is very rich in spices. The staple spice used is ‘base genep’
seasoning, which is the staple spice of the Balinese people. This
seasoning consists of onions, garlic, ginger, Laos, kencur, turmeric,
cayenne pepper, pecans, coriander, bay leaves, lemongrass leaves, lime
juice, brown sugar, terasi, and coconut oil.
The whole chicken is mixed with a base genep.
Put the seasoning into the chicken's stomach cavity and then wrap it
with betel nut leaves or banana leaves. Next, the chicken that has been
coated with leaves is buried in the soil and burns using chaff fire for 8–10 hours. A unique aroma is created from a blend of base genep and burning wrapping leaves.
Betutu Chicken Recipe
Of
course, at this time, the process of processing chicken betutu is not as
complicated as before. The technique of burning with chaff is rarely replaced by current burning techniques. Menong friends can try it
yourself at home with the following recipes:
Main ingredients:
1 chicken (kurleb 500 grams)
1 teaspoon salt and lime juice to soak chicken
Fine season:

curly chilies, 5 pieces of cayenne pepper, 3 garlic leaves, 6 shallots, 1
table, 2 segments of galangal, 1 turmeric section, 1 pulp, 1 section of
kencur, 1 sdt pepper, 4 slices of roasted pecans, 1 st terasi, 5 sheets
of orange leaves, 2 lemongrass stems, 2 sdt salt, and 1 sdt.
Other spices:
4 to cooking oil
3 sheets of bay leaves
Pucuk cassava leaves in moderation
Banana leaves in moderation
How to make:
Sauté
the seasoning until smooth and the bay leaves until fragrant and cooked.
Add a little water and let it boil. Turn off the fire
Set aside as much as 2 sdm to mix with cassava leaves.
Ins well the outside of the chicken and part of the abdominal cavity with a smooth seasoning that has been sautéed
Put this fine-toothed cassava leaf into the chicken's abdominal cavity and cover the abdominal cavity with a toothpick.
Wrap the chicken with banana leaves and steam for 2 hours.

Chicken Betutu Ibu Nia
In
order to fulfill the promise to Zauji, I also looked for information
about the famous chicken betutu in Denpasar. From the internet, I finally
found a betutu cock stall located not far from the hotel Ayam Betutu Ibu Nia, which turned out to have obtained a halal certificate from MUI.
Armed
with the phone number listed on her website, I also contacted the chicken
stalls at Betutu Ibu Nia. Through WhatsApp, +62 813-3830-4000, I get a
complete food menu list as well as make an order for the next day.
Because it does not use preservatives, of course, the chicken must be
ordered on the same day as our return day. In terms of price, it feels
like the price offered is not too expensive and is affordable.
I chose 1 original whole broiler chicken betutu that was delivered with GoSend the day before checking out
from the hotel. And it turns out that the size of the packaging is
quite large, and the seductive aroma is smelled as soon as I try to peek.
The chicken is wrapped in large rice paper (let it turn out that the
inside is wrapped in aluminum foil). The salt and sambal terasi have been included in it with separate gravy.
Arriving in Bandung, after removing the fatigue, we began to unbox the
souvenirs that I brought. Daaaannnnn... it turned out to be
immeasurable. I've never tasted chicken betutu before, and the chicken
menu is not my favorite menu. But Mother Nia's chicken is really
delicious in comparison.
Not only is the grilled chicken tasty with tender, flavorful spices that taste
different from other chicken preparations, but the sambal matah is also a
champion. The onion alloys, cayenne pepper, and oil are perfect for me.
For spicy fans, the seasoning of ‘base genep,’ the gravy, and sambal terasi is perfect on the tongue. It feels like
Zauji and I were able to spend one chicken and forget about the diet
program we were undergoing.
Even
my friend also gave the testimonies of the delicious chicken betutu of Ibu
Nia and made a recommendation of chicken betutu in Bali for Menong's
friends when they later visited Bali. The culinary archipelago never
disappoints. I think I want to go back to Bali and taste again processed
