Simple Liwet Rice Recipe From Indonesia

I myself was new to nasi liwet or liwet rice when I started working, meaning that I'm 20 years older and living in Bandung, Capital City of West Java Province, have never tasted the deliciousness of this spectacular Sundanese rice. 

Initially, Nasi Liwet was synonymous with Islamic Boading School life. The male students usually cook rice with makeshift ingredients and in a short time.

Nasi liwet is a unique dish because it is made very practically, easily and quickly in a special pan called 'kastrol'. Nasi liwet is cooked in one step until a crust forms at the bottom of a caster or pot made of aluminum. Now, for practical reasons, liwet rice can also be cooked using a rice cooker.
Liwet rice concoction is very simple:
  • 1 liter of rice
  • 5 cloves of red onion
  • 2 red chilies
  • 2 bay leaves
  • 1 lemongrass stalk
  • Salt to taste
  • Right amount of oil
  • Complementary side dishes

Rice that is directly cooked in castor, complete with salt, shallots, red chilies, bay leaves, lemongrass and a little cooking oil.
Cook until a crust forms.
Don't forget, while cooking the rice liwet, the lid of the caster must be opened occasionally so that the foam doesn't spill out of the caster.
As soon as the liwet rice is cooked, dip the hot caster into the water so that the crust will come off easily. Some people like this part of the crust so they will wait their last turn to get the liwet rice crust (including me :D )

The typical side dish of Nasi Liwet itself - usually fish peda, Jambal Roti, anchovies or impun - is put directly into the caster just before the Nasi Liwet is cooked, giving it a savory aroma and taste.

Nasi liwet will be incomplete if it is not served with other side dishes, which are usually tempeh, tofu, oncom, fish or fried chicken and crackers. And don't miss the sudden chili sauce and fresh vegetables such as cassava leaves, papaya leaves, petai or jengkol.

Spicy Sauce:
  • 3 pieces of lamb cayenne pepper
  • 1 red chili
  • 1 tomato
  • 1 clove of red onion (optional)
  • Salt to taste
  • Terasi enough
  • Brown sugar to taste

Lamb cayenne pepper, red chili are ground first with salt. Add the onion and then the tomatoes, shrimp paste and brown sugar. Taste correction.
Nasi liwet is served warm using a winnowing or banana leaf base with various side dishes spread on a winnowing tray or banana leaf and then eaten together in the garden or in the rice fields so that you will feel the feel of togetherness and simplicity.

Nasi liwet sometimes makes me forget the diet program because it is delicious. Aahhhh…..so miss liwet rice….
